I had a different experience of the quest. I never met the Khajit although I both met Claude in the pub and read the book before heading out. I had the key and didn't encounter Claude inside the dungeon instead I just took the carving finished exploring the ruin and then left.

[edit] Stealing back the carving

I know that you can steal back the carving from Claude, but once you give it to Umbacano can you steal it back? I tried to pickpocket it off of him but nothing was there and its not in the case with all the other statues.
